DESSERT FOR BREAKFAST IN SUMMER

VIOLET OMBRE CHIA PUDDING

Some days we just need dessert for breakfast, more so during the summer months! We’ve got you covered with this picture-perfect, pretty-looking Violet Ombre Chia Pudding that requires minimal preparation!
 
The mesmerising violet hue comes from Maqui berries, which contains energy-boosting properties and a host of phytonutrients! If you haven’t heard of this berry, it’s a vibrant purple berry, similar to blueberries and is only grown in certain parts of South America with 7x more antioxidant power than acai berries. 
 
Prepare your Violet Ombre Chia Pudding the night before and a mouthwatering, wholesome breakfast treat for the tummy and the eyes awaits you the next morning – if you manage not to eat it all the night itself!

INGREDIENTS

(Makes one serving) 
 
1 1/2 cup unsweetened almond milk
1/2 cup chia seeds
2 tbsp rice malt syrup
3 tsp freeze-dried maqui berry powder
1 tsp vanilla extract
 
Toppings :
Coconut yogurt
Cherry
Grated dark chocolate 
 

DIRECTIONS

1. In a clean jar, add all the ingredients except for the maqui berry powder. Whisk the mixture thoroughly. Leave the jar overnight in the fridge.
 
2. To create the ombre effect, scoop 1/2 cup of chia seed pudding into a glass. For the second layer, scoop 1/2 cup of chia seed pudding into a small bowl & whisk in 1/2 tsp of maqui berry powder. Transfer the mixture into the glass.
 
3. For the subsequent layer, scoop 1/2 cup of chia seed pudding into the small bowl & whisk in 1 tsp of maqui berry powder. Transfer the mixture into the glass.
 
4. For the final layer, scoop 1/2 cup of chia seed pudding into the small bowl & whisk in 1 1/2 tsp of maqui berry powder. Transfer the mixture into the glass & topped it off with a dollop of coconut yogurt, cherry & grated dark chocolate and voila! You’ve created a masterpiece for breakfast with your very own Violet Ombre Chia Puding!

    Oh wow, not only does this look gorgeous it sounds so tasty! I have a weakness for purple food, it’s my favorite color :-).
