This simple-to-make tropical mango and sweet red pepper salsa recipe is a blend of fruit, vegetables and that added zing which is perfect for summer. This refreshing salsa is best served with grilled or barbecued meats or enjoyed as a dip with crackers. No need for a stove, just chop, mix and voila!
MANGO AND SWEET RED PEPPER SALSA RECIPE
Serves: 3-4 pax as an accompaniment
Cooking Time: 10 minutes preparation ; 20 minutes chilling
1 Ripe Mango
2 Red sweet chili pepper
Juice of 1 lime
1 tablespoon olive oil
Handful of chopped fresh coriander
Salt & pepper to taste
Salad leaves and lime wedges to serve
Peel and halve the mango and remove the seed, then cut the flesh into 2cm dice cubes. Coarsely chop the coriander leaves. Cut the red peppers into smaller 1cm dice then mix the mango and peppers together in a bowl with the lime juice, olive oil and chopped coriander. Add salt and pepper to taste and mix well. Chill the salsa for 20 minutes in the fridge before serving.
When ready to serve, arrange salad leaves in a serving dish, spoon the mango and chili salsa on top and serve garnished with lime wedges.
Tips : To add an extra kick to this mango and sweet red pepper salsa, finely chop one birds eye chili and add to the mix before serving.
