ACAI BERRIES PANNA COTTA

Traditionally, the classic Panna Cotta is made with heavy cream and gelatin which are good on our lips but bad for our hips. With this guilt-free, dairy-free, vegan recipe, organic silken tofu is used as a substitute for the heavy cream to recreate that rich and silky texture that we oh-so-love.
The secret ingredient added to give you the extra zing in this recipe is the super nutritious acai berry powder. This superfood imparts a slight refreshing tang with a whole lot of antioxidants to give you that summer glow!

INGREDIENTS
150grams organic silken tofu
200ml unsweetened almond milk
3-4 tablespoons organic rice malt syrup
1 1/2 tablespoons organic freeze-dried acai berry powder
1 teaspoon vanilla extract
1 teaspoon agar-agar powder
Toppings:
Mixed Berries
Granola
Vegan Dark Chocolate Chunks
DIRECTIONS
1. Place all the ingredients in a high – speed blender. Blend until smooth and creamy.
2. Empty the mixture into a small saucepan. On a medium heat, whisk the mixture until it boils. Then, continue whisking the mixture on a low heat for one minute.
3. Pour the panna cotta mixture into four oiled ramekins. Refrigerate them for at least 4 hours.
4. When they are set, remove them from the ramekins and top with mixed berries, granola and shards of vegan dark chocolate.
*You can make this delightful dessert up to 2 days in advance and you will only need 10 minutes to whip it up!
