FROZEN COCONUT HIBISCUS YOGURT BARK
Hot summer days calls for a frozen treat! Our protein-packed Tie-Dye Frozen Coconut Hibiscus Yogurt Bark combines the tropical flavours of coconut and hibiscus to cool you down in a healthier way.
In most tropical countries, hibiscus (roselle) tea is widely used as a thirst-quencher while coconuts are great for rehydration. Pairing these two tropical ingredients together is a no-brainer and we’ve come up with an easy-to-make recipe that will definitely delight all your senses. This recipe uses coconut yogurt instead of plain yogurt. Coconut yogurt is dairy-free and full of probiotics.
Frozen yogurt barks are fun to eat and creating a tie-dye marble effect makes it even better!
TIE-DYE FROZEN COCONUT HIBISCUS YOGURT BARK

INGREDIENTS
(Makes 8″ X 4″ Slab)
1 cup of unsweetened coconut yogurt
1 1/2 tablespoon rice malt syrup
1/2 teaspoon hibiscus tea powder
Optional Toppings :
1/2 cup of fresh or frozen blueberries
2 tablespoon crushed pistachio
DIRECTIONS
1. Mix unsweetened coconut yogurt and rice malt syrup in a bowl ensuring they are evenly combined.
2. To make the hibiscus yogurt, scoop 1/2 cup of the sweetened coconut yogurt into a small bowl and stir in the hibiscus tea powder.
3. Line a 8″x4″ pan with parchment paper. To create the tie-dye effect, scoop alternate tablespoons of sweetened coconut yogurt and hibiscus coconut yogurt into the pan. Use the back of a knife to draw figure 8’s all over the yogurt mixture.
4. Scatter some fresh or frozen blueberries and crushed pistachios over the yogurt mixture. Place the pan into the freezer for at least 4 hours. Once the coconut yogurt is set, have fun breaking them up into chunks!
