MINTY CHOCOLATE RASPBERRY POPSICLE

Meet your new favourite treat to cool yourself down this summer! Our Minty Chocolate Raspberry Popsicle recipe combines all the flavours that will be loved by both adults and kids.

These fun-sized frozen treats are made with fresh raspberries and mint leaves, making it extra tasty and nutritious. All you need are just five ingredients and Popsicle moulds to create this healthy, refreshing hand-held dual flavour ice treat. You can even double up the recipe if you have more moulds to fill up. This Minty Chocolate Raspberry Popsicle will definitely be a hit under the heat.

MINTY CHOCOLATE RASPBERRY POPSICLE

INGREDIENTS

(Makes 6 Popsicle sticks) 
 

Minty Raspberry Layer ingredients

1 cup fresh raspberries

1/2 cup coconut cream

2-3 tablespoons rice malt syrip

1 tablespoon chopped fresh mint leaves

Minty Chocolate Layer ingredients

1/2 cup chopped vegan dark chocolate

1/2 cup coconut cream

1-2 tablespoon rice malt syrup

1 tablespoon chopped fresh mint leaves

 

DIRECTIONS

1. Prepare the Minty Raspberry Layer by combining all ingredients into a blender and blend at high speed until you get a smooth and creamy consistency.

2. Fill in half of the popsicle moulds with the Minty Raspberry mixture and freeze for an hour to set.

3. Prepare the Minty Chocolate Layer by heating the coconut cream over low heat on the stove. Turn off the heat before the coconut cream begins to bubble up. Add in the chopped dark chocolate to the heated coconut cream and stir until completely melted. Set aside to cool.

4. When the coconut and chocolate mixture is cooled down, add in the rice malt syrup and mint leaves into a blender and blend all the ingredients at high speed until you get a smooth and creamy consistency.

5. Once the Minty Raspberry mixture is set, pour in the Minty Chocolate mixture to fill up the Popsicle moulds and freeze once more for another three hours.

6. To get the Popsicle out of its mould, simply put the moulds under running warm water for a few seconds to loosen them up.
